  • (8 oz) pasta (fusilli or penne)
  • (2) chicken breasts
  • (1/4 cups) pesto sauce
  • (1/2 cups) cherry tomatoes, halved
  • (1/4 cups) red onion, diced
  • (1/2 cups) mozzarella balls, halved
  • (1/4 cups) walnuts, chopped
  • (2 tbsp) olive oil
  • (1) lemon, juiced
  • (1/2 tsp) salt
  • (1/4 tsp) black pepper

Instructions

    In a large pot, bring salted water to a boil and cook (8 oz) pasta according to package instructions until al dente. Drain and set aside to cool.

    While the pasta cooks, season both (2) chicken breasts with (1/2 tsp) salt and (1/4 tsp) black pepper. Heat (2 tbsp) olive oil in a skillet over medium heat, and add the chicken breasts.

    Cook the chicken for about 7-8 minutes on each side or until the internal temperature reaches 165°F (75 °C). Remove from heat and let the chicken rest before slicing.

    In a large bowl, combine the cooled pasta, sliced chicken, (1/4 cup) pesto sauce, (1/2 cup) cherry tomatoes, (1/4 cup) red onion, (1/2 cup) mozzarella balls, and (1/4 cup) walnuts.
