Ingredients

- (8 oz) pasta (fusilli or penne)
- (2) chicken breasts
- (1/4 cups) pesto sauce
- (1/2 cups) cherry tomatoes, halved
- (1/4 cups) red onion, diced
- (1/2 cups) mozzarella balls, halved
- (1/4 cups) walnuts, chopped
- (2 tbsp) olive oil
- (1) lemon, juiced
- (1/2 tsp) salt
- (1/4 tsp) black pepper

In a large pot, bring salted water to a boil and cook (8 oz) pasta according to package instructions until al dente. Drain and set aside to cool.

While the pasta cooks, season both (2) chicken breasts with (1/2 tsp) salt and (1/4 tsp) black pepper. Heat (2 tbsp) olive oil in a skillet over medium heat, and add the chicken breasts.

Cook the chicken for about 7-8 minutes on each side or until the internal temperature reaches 165°F (75 °C). Remove from heat and let the chicken rest before slicing.

In a large bowl, combine the cooled pasta, sliced chicken, (1/4 cup) pesto sauce, (1/2 cup) cherry tomatoes, (1/4 cup) red onion, (1/2 cup) mozzarella balls, and (1/4 cup) walnuts.

Drizzle the juice of (1) lemon over the salad and toss everything gently until well mixed. Adjust seasoning with more salt or pepper if needed.
