Chicken Fried Rice

Ingredients
Yields 4 servings
- (2 cups) cooked white rice
- (1 cup) diced chicken breast
- (1/2 cups) frozen peas
- (1/2 cups) diced carrots
- (1/2 cups) chopped green onions
- (2 tablespoons) soy sauce
- (1 tablespoon) sesame oil
- (2 tablespoons) vegetable oil
- (2 cloves) minced garlic
- (2) large eggs
- Salt to taste
- Pepper to taste
Instructions

Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.

Add 1 cup of diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

In the same skillet, add another tablespoon of vegetable oil and 2 cloves of minced garlic. Sauté for 30 seconds until fragrant.

Add 1/2 cup of diced carrots and 1/2 cup of frozen peas to the skillet. Cook for 3-4 minutes until the vegetables are tender.

Push the vegetables to one side of the skillet, and crack 2 large eggs into the other side. Scramble the eggs until fully cooked, then mix with the vegetables.

Add the cooked chicken back to the skillet along with 2 cups of cooked white rice, 2 tablespoons of soy sauce, and 1 tablespoon of sesame oil. Mix everything together and cook for an additional 3-5 minutes, stirring occasionally.

Season with salt and pepper to taste, and stir in 1/2 cup of chopped green onions just before serving.
