Chicken and Vegetable Quinoa

- (1 lb) chicken breast, diced
- (1 cup) quinoa, rinsed
- (2 cups) vegetable broth
- (1) bell pepper, diced
- (1) zucchini, diced
- (1) carrot, diced
- (1 cup) broccoli florets
- (2) garlic cloves, minced
- (2 tbsp) olive oil
- (1 tsp) dried oregano
- (1 tsp) paprika
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (1/4 cups) fresh parsley, chopped

In a medium pot, combine (1 cup) quinoa and (2 cups) vegetable broth. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until liquid is absorbed. Fluff with a fork and set aside.

While the quinoa cooks, heat (2 tbsp) olive oil in a large skillet over medium heat.

Add (1 lb) diced chicken breast to the skillet and season with (1/2 tsp) salt, (1/4 tsp) black pepper, (1 tsp) dried oregano, and (1 tsp) paprika. Cook for about 7-10 minutes, or until the chicken is browned and cooked through, stirring occasionally.

Add (2) minced garlic cloves, (1) diced bell pepper, (1) diced zucchini, (1) diced carrot, and (1 cup) broccoli florets to the skillet. Sauté for an additional 5-7 minutes or until the vegetables are tender.

Stir in the cooked quinoa and mix until everything is well combined. Cook for another 2-3 minutes to heat through.
