Chicken and Spinach Lemon Orzo

Ingredients

- (1 lb) chicken breast, diced
- (1 cup) orzo pasta
- (2 cups) fresh spinach, chopped
- (1) medium onion, diced
- (3 cloves) garlic, minced
- (1) lemon, juiced and zested
- (4 cups) chicken broth
- (2 tbsp) olive oil
- (1 tsp) dried oregano
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (1/4 cups) grated Parmesan cheese, optional

In a large pot, heat 2 tablespoons of olive oil over medium heat.

Add 1 medium onion, diced, and sauté for 3-4 minutes until translucent.

Stir in 3 cloves of minced garlic and cook for an additional 1 minute until fragrant. Add 1 tsp dried oregano, 2/4 tsp salt, and 1/4 tsp black pepper.

Add 1 lb diced chicken breast to the pot. Season with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1 teaspoon dried oregano. Cook for about 5-7 minutes until the chicken is browned and cooked through.

Pour in 4 cups of chicken broth and bring to a boil.

Once boiling, add 1 cup of orzo pasta and reduce heat to a simmer. Cook for about 10 minutes, stirring occasionally, until the orzo is tender.

Stir in 2 cups of chopped fresh spinach, the juice and zest of 1 lemon, and mix well. Cook for another 2-3 minutes until the spinach is wilted.

Remove from heat and stir in 1/4 cup of grated Parmesan cheese, if using. Adjust seasoning if necessary.
