Cheesy Veggie and Rice Bake

- (3/4 cups) broccoli florets
- (3/4 cups) diced bell peppers
- (3/4 cups) chopped spinach
- (3/4 cups) corn kernels
- (3/4 cups) shredded cheddar cheese
- (3/4 cups) shredded mozzarella cheese
- (1/4 cups) grated Parmesan cheese
- (1/4 cups) milk
- (1/4 tsp) black pepper
- (1/4 tsp) garlic powder
- (1/4 tsp) onion powder
- (1 1/4 tbsp) olive oil
- (1 egg)
- (1/4 cups) breadcrumbs

Preheat your oven to 375°F (190 °C).

In a large mixing bowl, combine the (1 1/4 cups) cooked rice, (3/4 cup) broccoli florets, (3/4 cup) diced bell peppers, (3/4 cup) chopped spinach, and (3/4 cup) corn kernels.

In a separate bowl, whisk together the (3/4) egg, (1/4 cup) milk, (1/4 tsp) black pepper, (1/4 tsp) garlic powder, and (1/4 tsp) onion powder until well combined.

Pour the egg mixture over the rice and vegetables, then stir in (3/4 cup) shredded cheddar cheese, (3/4 cup) shredded mozzarella cheese, and (1/4 cup) grated Parmesan cheese. Mix everything together until evenly coated.

Grease a baking dish with (3/4 tbsp) olive oil. Transfer the mixture to the dish, spreading it out evenly.
