  • (8 oz) penne pasta
  • (1 tbsp) olive oil
  • (3 cloves) garlic, minced
  • (1 can / 14 oz) artichoke hearts, drained and chopped
  • (4 cups) fresh spinach, roughly chopped
  • (1 cup) cream cheese, softened
  • (1 cup) sour cream
  • (1 cup) shredded mozzarella cheese
  • (1/2 cups) grated Parmesan cheese
  • (1/2 tsp) black pepper
  • (1/4 tsp) salt
  • (1/2 tsp) Italian seasoning
  • (1/4 cups) breadcrumbs

Instructions

    Preheat your oven to 350°F (175 °C).

    In a large pot, boil water and cook the (8 oz) penne pasta according to package instructions until al dente. Drain and set aside.

    In a large skillet, heat (1 tbsp) olive oil over medium heat. Add the (3 cloves) minced garlic and sauté for about 1 minute until fragrant.

    Add the (1 can / 14 oz) chopped artichoke hearts and (4 cups) chopped spinach to the skillet. Cook until the spinach is wilted, about 3-4 minutes.

    In a large mixing bowl, combine the cooked pasta, sautéed spinach and artichokes, (1 cup) cream cheese, (1 cup) sour cream, (1 cup) shredded mozzarella cheese, (1/2 cup) grated Parmesan cheese, (1/2 tsp) black pepper, (1/4 tsp) salt, and (1/2 tsp) Italian seasoning. Mix well until everything is combined.

    Transfer the mixture into a greased baking dish and spread it out evenly. Sprinkle (1/4 cup) breadcrumbs on top for added crunch.

    Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
