Caprese Grilled Cheese Sandwich

Ingredients
Yields 4 servings
- (4 slices) of sourdough bread
- (4 oz) fresh mozzarella cheese, sliced
- (1) medium tomato, sliced
- (1/4 cups) fresh basil leaves
- (2 tbsp) balsamic glaze
- (2 tbsp) unsalted butter

Spread (1 tbsp) of butter on one side of each slice of sourdough bread.

Place (2) slices of the bread butter-side down in a skillet over medium heat.

Layer the (4 oz) fresh mozzarella cheese evenly on top of the bread in the skillet.

Add the (1) medium tomato slices on top of the cheese followed by (1 /4) cup of fresh basil leaves.

Drizzle (2 tbsp) of balsamic glaze over the basil and top with the remaining (2) slices of bread, butter-side up.

Cook for about 4-5 minutes until the bottom is golden brown, then carefully flip and cook for another 4-5 minutes until the other side is golden and the cheese is melted.

Remove from heat and let cool for a minute before slicing in half.
