- (1 lb) large shrimp, peeled and deveined
- (1) red bell pepper, sliced
- (1) yellow bell pepper, sliced
- (1) zucchini, sliced
- (1) red onion, sliced
- (2 tbsp) olive oil
- (1 tbsp) Cajun seasoning
- (2 cloves) garlic, minced
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (1/4 cups) fresh parsley, chopped

In a large bowl, combine the (1 lb) shrimp with (1 tbsp) Cajun seasoning, (1/2 tsp) salt, and (1/4 tsp) black pepper. Toss to coat the shrimp evenly and set aside.

In a large skillet, heat (2 tbsp) olive oil over medium-high heat. Add the (2 cloves) garlic and sauté for 1 minute until fragrant.

Next, add the (1) sliced red onion, (1) sliced red bell pepper, (1) sliced yellow bell pepper, and (1) sliced zucchini to the skillet. Cook for 5-7 minutes until the veggies are tender but still crisp.

Add the seasoned shrimp to the skillet and cook for an additional 4-5 minutes until the shrimp are pink and opaque, stirring occasionally.
