Cajun Shrimp and Veggie Skillet Dinner

Ingredients

- (1 lb) shrimp, peeled and deveined
- (2 tablespoons) olive oil
- (1) medium onion, diced
- (1) bell pepper, diced
- (2) medium zucchinis, sliced
- (1 cup) corn kernels (fresh or frozen)
- (3 cloves) garlic, minced
- (2 teaspoons) Cajun seasoning
- (1 teaspoon) smoked paprika
- Salt and pepper to taste
- (1 tablespoon) fresh parsley, chopped (for garnish)

In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Add 1 medium onion, diced, and sauté for about 3 minutes until translucent.

Stir in 1 diced bell pepper and 2 medium zucchinis, sliced, and cook for another 5 minutes until the vegetables start to soften. Add 1 teaspoon smoked paprika.

Add 1 cup of corn kernels, 3 cloves of minced garlic, 2 teaspoons of Cajun seasoning, and 1 teaspoon of smoked paprika to the skillet. Stir well to combine and cook for 2 minutes.

Push the vegetables to one side of the skillet and add the shrimp to the other side. Season the shrimp with salt and pepper to taste.

Cook the shrimp for about 3-4 minutes, flipping halfway through, until they are pink and opaque.

Once the shrimp are cooked, mix everything together in the skillet and cook for an additional 1-2 minutes to heat through.

Remove from heat and garnish with 1 tablespoon of chopped fresh parsley before serving.
