Cajun Seafood Boil with Garlic Butter Sauce

Ingredients
Yields 4 servings
- (2 pounds) shrimp, deveined and shell-on
- (1 pound) crab legs, cleaned
- (4) ears corn, cut into halves
- (1 pound) baby potatoes, halved
- (1/4 cups) Cajun seasoning
- (1/4 cups) unsalted butter
- (6 cloves) garlic, minced
- (1) lemon, juiced
- (1/4 cups) fresh parsley, chopped
- Salt to taste
- Water for boiling

In a large pot, fill with enough water to cover the seafood and vegetables. Add 1/4 cup Cajun seasoning and salt to taste. Bring to a boil over high heat.

Once boiling, add 1 pound baby potatoes and cook for 15 minutes until tender.

Add 4 ears corn and cook for an additional 5 minutes.

Next, add 2 pounds shrimp and 1 pound crab legs. Cook for 3-5 minutes until the shrimp turn pink and the crab is heated through.

While the seafood is cooking, melt 1/4 cup unsalted butter in a small saucepan over medium heat. Add 6 cloves minced garlic and sauté for 2 minutes until fragrant. Remove from heat and stir in the juice of 1 lemon and 1/4 cup chopped parsley.

Once the seafood and vegetables are cooked, drain the pot and transfer everything to a large serving platter.

Drizzle the garlic butter sauce over the seafood boil and toss gently to combine. Serve hot.
