Cajun Salmon Orzo

Ingredients

- (4) salmon fillets (6 oz each)
- (1 tablespoon) Cajun seasoning
- (1 tablespoon) olive oil
- (1) medium onion, diced
- (2 cloves) garlic, minced
- (1) red bell pepper, diced
- (1 cup) cherry tomatoes, halved
- (1 cup) orzo pasta
- (4 cups) vegetable broth
- (1 cup) spinach, chopped
- (1/2 cups) heavy cream
- Salt to taste
- Black pepper to taste
- Fresh parsley, chopped (for garnish)

Season 4 salmon fillets (6 oz each) with 1 tablespoon Cajun seasoning, salt, and black pepper.

In a large skillet, heat 1 tablespoon olive oil over medium heat. Add the salmon fillets, skin-side down, and cook for 5 minutes until crispy. Flip and cook for another 3 minutes. Remove the salmon and set aside.

In the same skillet, add 1 medium onion (diced) and sauté for 3 minutes until translucent. Add 2 cloves garlic (minced) and cook for an additional 1 minute.

Stir in 1 red bell pepper (diced) and 1 cup cherry tomatoes (halved). Cook for 4 minutes until softened.

Add 1 cup orzo pasta and 4 cups vegetable broth to the skillet. Bring to a boil, then reduce heat to low and simmer for 10-12 minutes until the orzo is cooked and the liquid is mostly absorbed.

Stir in 1 cup spinach (chopped) and 1/2 cup heavy cream. Cook for another 2 minutes until the spinach wilts and the mixture is creamy.

Return the salmon to the skillet, nestling it into the orzo. Cook for an additional 2 minutes to heat through.
