  • (2) large potatoes, diced
  • (4) large eggs
  • (8 oz) breakfast sausage, casings removed
  • (1/2) bell pepper, diced
  • (1/2) onion, diced
  • (2 tbsp) olive oil
  • (1/4 tsp) black pepper
  • (1/4 tsp) paprika
  • (1/4 tsp) salt
  • (1/4 cups) shredded cheese (optional)

Instructions

    In a large skillet, heat (2 tbsp) olive oil over medium heat.

    Add the (2) diced potatoes to the skillet and season with (1/4 tsp) salt, (1/4 tsp) black pepper, and (1/4 tsp) paprika. Cook for about 15 minutes, stirring occasionally, until they are golden brown and tender.

    Add the (1 /4) diced onion and (1 /2) diced bell pepper to the skillet. Continue to cook for another 5 minutes until the vegetables are soft.

    Push the potato mixture to one side of the skillet. In the cleared space, add the (8 oz) breakfast sausage. Cook and crumble the sausage until browned, about 5-7 minutes.

    Once the sausage is cooked, stir everything together in the skillet.

    Make 4 small wells in the mixture and crack (4) large eggs into each well. Cover the skillet and let the eggs cook until the whites are set but yolks are still runny, about 5-7 minutes.

    If using, sprinkle (1/4 cup) shredded cheese over the skillet and cover for another 1-2 minutes until melted.

    Serve the skillet hot, straight from the pan.
