Breakfast Burritos

- (1/2 cups) milk
- (1 cup) shredded cheddar cheese
- (1/2 cups) diced bell peppers
- (1/2 cups) diced onions
- (1/2 cups) cooked and crumbled breakfast sausage
- (1/2 teaspoons) salt
- (1/4 teaspoons) black pepper
- (4) large flour tortillas
- (1/4 cups) salsa (optional)
- (1/4 cups) chopped fresh cilantro (optional)

In a large bowl, whisk together 8 large eggs and 1/2 cup milk until well combined.

Add 1/2 teaspoon salt and 1/4 teaspoon black pepper to the egg mixture and stir.

In a large skillet over medium heat, add 1/2 cup diced onions and 1/2 cup diced bell peppers. Sauté for 3-4 minutes until softened.

Add 1/2 cup cooked and crumbled breakfast sausage to the skillet and cook for an additional 2 minutes.

Pour the egg mixture into the skillet with the vegetables and sausage. Cook, stirring gently, until the eggs are scrambled and just set, about 5-7 minutes.

Remove the skillet from heat and stir in 1 cup shredded cheddar cheese until melted and combined.

Warm the 4 large flour tortillas in a dry skillet or microwave until pliable, about 30 seconds.

Divide the egg mixture evenly among the tortillas, placing it in the center of each.

Fold in the sides of the tortilla, then roll from the bottom up to enclose the filling. Repeat with all tortillas.
