Breakfast Burrito with Eggs, Beans, and Avocado

- (1/2 cups) black beans, rinsed and drained
- (1) medium avocado, diced
- (1/4 cups) shredded cheese (cheddar or your choice)
- (1) medium tomato, diced
- (1/4 cups) chopped onion
- (1/4 cups) fresh cilantro, chopped
- (1 tbsp) olive oil
- (4) large flour tortillas
- (1/4 tsp) ground cumin
- (1/4 tsp) salt
- (1/4 tsp) black pepper

In a large bowl, crack the (4) large eggs and whisk them together until well combined.

Heat (1 tbsp) olive oil in a non-stick skillet over medium heat. Add (1/4 cup) chopped onion and sauté until translucent, about 3 minutes.

Add the eggs to the skillet and season with (1/4 tsp) salt, (1/4 tsp) black pepper, and (1/4 tsp) ground cumin. Stir gently until scrambled and cooked to your liking, about 5 minutes.

In a separate bowl, mix the (1/2 cup) black beans, (1) medium diced tomato, and (1/4 cup) chopped cilantro. Season with (1/4 tsp) salt if desired.

To assemble, place a tortilla on a flat surface. In the center, add a portion of the scrambled eggs, followed by a scoop of the black bean mixture and some diced avocado.

Top with (1/4 cup) shredded cheese, then fold the sides of the tortilla and roll it up tightly to form a burrito.
