Black Bean Soup

Ingredients
Yields 4 servings
- (1 tablespoon) olive oil
- (1) medium onion, chopped
- (2 cloves) garlic, minced
- (1) medium carrot, diced
- (1) medium bell pepper, diced
- (1 teaspoon) ground cumin
- (1 teaspoon) smoked paprika
- (1/2 teaspoons) salt
- (1/4 teaspoons) black pepper
- (4 cups) vegetable broth
- (2) (15-ounce) cans black beans, rinsed and drained
- (1) (14 2/4-ounce) can diced tomatoes with green chilies
- (1 tablespoon) lime juice
- (1/4 cups) fresh cilantro, chopped (for garnish)

In a large pot, heat 1 tablespoon olive oil over medium heat.

Add 1 medium onion, chopped, and sauté for 5 minutes until softened.

Stir in 2 cloves garlic, minced, and cook for an additional minute until fragrant.

Add 1 medium carrot, diced, and 1 medium bell pepper, diced, and cook for 5 more minutes until the vegetables are tender.

Sprinkle in 1 teaspoon ground cumin, 1 teaspoon smoked paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper, stirring to combine.

Pour in 4 cups vegetable broth, then add 2 cans of black beans (rinsed and drained) and 1 can of diced tomatoes with green chilies.

Bring the mixture to a boil, then reduce heat and let it simmer uncovered for 30 minutes, stirring occasionally.

After 30 minutes, use an immersion blender to blend the soup until smooth, or transfer it to a blender in batches and blend until smooth.

Stir in 1 tablespoon lime juice and adjust seasoning if necessary.
