Ingredients
Yields 4 8oz glasses
- (2 cups) mixed berries (strawberries, blueberries, raspberries)
- (1 cup) coconut milk
- (1/2 cups) Greek yogurt
- (2 tablespoons) honey
- (1 teaspoon) vanilla extract
- (1 tablespoon) lime juice
- (1/4 cups) shredded coconut (optional)

In a blender, combine 2 cups mixed berries, 1 cup coconut milk, 1/2 cup Greek yogurt, 2 tablespoons honey, 1 teaspoon vanilla extract, and 1 tablespoon lime juice.

Blend the mixture until smooth and creamy, about 1-2 minutes.

If using, stir in 1/4 cup shredded coconut for added texture.

Pour the smoothie mixture into popsicle molds, leaving a little space at the top for expansion.

Insert sticks into the molds and freeze for at least 4 hours or until completely solid.

To release the pops, run warm water over the outside of the molds for a few seconds before pulling them out.
