Berry Coconut Frozen Yogurt Bark

Ingredients

- (2 cups) plain Greek yogurt
- (1/4 cups) honey
- (1 teaspoon) vanilla extract
- (1/2 cups) shredded coconut
- (1 cup) mixed berries (strawberries, blueberries, raspberries)

In a mixing bowl, combine 2 cups plain Greek yogurt, 1/4 cup honey, and 1 teaspoon vanilla extract. Mix until smooth.

Line a baking sheet with parchment paper.

Spread the yogurt mixture evenly onto the prepared baking sheet, about 1/2 inch thick.

Sprinkle 1/2 cup shredded coconut over the yogurt layer.

Evenly distribute 1 cup mixed berries on top of the coconut and gently press them into the yogurt.

Place the baking sheet in the freezer for 60 minutes or until the yogurt is firm.

Once frozen, remove from the freezer and break into pieces. Serve immediately or store in an airtight container in the freezer.
