Beef Stew

Ingredients
Yields 4 servings
- (1 lb) beef chuck, cut into 1-inch cubes
- (2 tbsp) vegetable oil
- (1) medium onion, chopped
- (2 cloves) garlic, minced
- (4) medium carrots, sliced
- (3) medium potatoes, diced
- (4 cups) beef broth
- (1 tsp) dried thyme
- (1 tsp) dried rosemary
- (2) bay leaves
- Salt to taste
- Pepper to taste
- (2 tbsp) all-purpose flour (optional, for thickening)

In a large pot, heat 2 tbsp vegetable oil over medium-high heat.

Add 1 lb beef chuck and brown on all sides, about 5-7 minutes. Remove beef and set aside.

In the same pot, add 1 medium onion and sauté until translucent, about 3 minutes.

Stir in 2 cloves minced garlic and cook for an additional 1 minute.

Return the beef to the pot and add 4 cups beef broth, 1 tsp dried thyme, 1 tsp dried rosemary, and 2 bay leaves. Bring to a boil.

Reduce heat to low, cover, and simmer for 30 minutes.

Add 4 medium carrots and 3 medium potatoes to the pot. Season with salt and pepper to taste.

Cover and simmer for another 30 minutes, or until the vegetables are tender and the beef is cooked through.

If a thicker stew is desired, mix 2 tbsp all-purpose flour with a little water to create a slurry, and stir it into the pot. Cook for an additional 5 minutes.
