  • (1 cup) rolled oats
  • (1 cup) milk
  • (2) ripe bananas
  • (2) large eggs
  • (1 teaspoon) baking powder
  • (1 teaspoon) vanilla extract
  • (1/2 teaspoons) cinnamon
  • (1/4 teaspoons) salt
  • (1 tablespoon) vegetable oil
  • Maple syrup for serving

Instructions

    In a medium bowl, combine 1 cup rolled oats and 1 cup milk. Let it sit for about 15 minutes to soften the oats.

    In a blender, add the soaked oats and milk mixture, 2 ripe bananas, 2 large eggs, 1 teaspoon baking powder, 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Blend until smooth.

    Heat a non-stick skillet over medium heat and add 1 tablespoon vegetable oil.

    Pour 1/4 cup of the batter onto the skillet for each pancake. Cook for about 3-4 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
