Avocado Breakfast Toast with Poached Eggs

- (4 slices) of whole grain bread
- (2) ripe avocados
- (4) large eggs
- (1 tbsp) lemon juice
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (1 tbsp) olive oil
- (2 tbsp) fresh chives, chopped

Toast the (4) slices of whole grain bread until golden brown.

While the bread is toasting, prepare the poached eggs. In a large pot, fill with water and bring to a gentle simmer.

Crack (1) egg at a time into a small bowl, then gently slide it into the simmering water. Repeat for the remaining eggs. Poach for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon and drain on paper towels.

In a bowl, mash the (2) ripe avocados with (1 tbsp) lemon juice, (1/2 tsp) salt, and (1/4 tsp) black pepper until smooth yet still a bit chunky.

Spread the avocado mixture evenly over the toasted bread slices. Top each with a poached egg.
