Avocado and Egg Breakfast Sandwiches

Ingredients

- (4) large eggs
- (2) ripe avocados
- (4 slices) whole grain bread
- (4 tbsp) mayonnaise
- (1) small lime
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (2 slices) cheddar cheese
- (1 tbsp) olive oil
- (1 clove) garlic, minced

In a skillet, heat (1 tbsp) olive oil over medium heat. Add (1) clove minced garlic and sauté for about 30 seconds until fragrant.

Crack (4) large eggs into the skillet and cook to your desired doneness (sunny-side up or over-easy). Season with (1/2 tsp) salt and (1/4 tsp) black pepper during cooking.

While the eggs are cooking, slice (2) ripe avocados in half, remove the pit, and scoop the flesh into a bowl. Mash lightly with a fork, and squeeze in the juice of (1) small lime to prevent browning. Mix well.

Toast (4) slices of whole grain bread until golden brown.

Spread (4 tbsp) mayonnaise evenly across the toasted bread.

On two slices of the bread, layer the avocado mash, followed by (2) slices of cheddar cheese, and then top with the cooked eggs. Cover with the other two slices of bread to form sandwiches.
