Apple Pie

Ingredients

- (1 teaspoon) salt
- (1 tablespoon) granulated sugar
- (1 cup) unsalted butter, chilled and diced
- (6 to 8 tablespoons) ice water
- (6 cups) thinly sliced apples (about 6 medium apples)
- (3/4 cups) granulated sugar
- (2 tablespoons) all-purpose flour
- (1 teaspoon) ground cinnamon
- (1/4 teaspoons) ground nutmeg
- (2 tablespoons) lemon juice
- (1 tablespoon) butter, diced
- (1 egg) , beaten (for egg wash)

In a large bowl, mix 2 1/2 cups all-purpose flour, 1 teaspoon salt, and 1 tablespoon granulated sugar.

Add 1 cup diced unsalted butter to the flour mixture and mix until the mixture resembles coarse crumbs.

Stir in 6 to 8 tablespoons of ice water, one tablespoon at a time, until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 30 minutes.

Preheat your oven to 425°F (220 °C).

In a large bowl, combine 6 cups sliced apples, 3/4 cup granulated sugar, 2 tablespoons flour, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 2 tablespoons lemon juice. Toss to coat the apples evenly.

Roll out one dough disc on a floured surface to fit a 9-inch pie pan. Place the rolled dough into the pan and fill with the apple mixture. Dot with 1 tablespoon diced butter.

Roll out the second dough disc and place it over the filling. Seal and flute the edges, then cut slits in the top crust to allow steam to escape.

Brush the top crust with the beaten egg to give it a golden color when baked.

Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175 °C) and continue baking for 30-35 minutes, or until the apples are soft and the crust is golden brown.
