Ingredients

Servings4

Yields 4 servings

  • (1 lb) chicken breast, cut into strips
  • (1 cup) breadcrumbs
  • (1/2 cups) all-purpose flour
  • (2) large eggs
  • (1 tsp) garlic powder
  • (1 tsp) onion powder
  • (1 tsp) paprika
  • (1/2 tsp) salt
  • (1/4 tsp) black pepper
  • (4) large tortillas
  • (1 cup) lettuce, shredded
  • (1 cup) cherry tomatoes, halved
  • (1/2) cucumber, sliced
  • (1/4 cups) ranch dressing
  • (1/4 cups) shredded cheese (optional)

Instructions

  1. 1

In a bowl, combine 1 cup breadcrumbs, 1/2 cup all-purpose flour, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp paprika, 1/2 tsp salt, and 1/4 tsp black pepper. Add 2/4 tsp salt.

  2. 2

In a separate bowl, beat 2 large eggs.

  3. 3

Dip each chicken strip (1 lb) first in the egg, then coat in the breadcrumb mixture, pressing gently to adhere.

  4. 4

Preheat the air fryer to 400°F (200 °C) for about 5 minutes.

  5. 5

Place the coated chicken strips in the air fryer basket in a single layer, ensuring they are not overcrowded.

  6. 6

Cook the chicken in the air fryer for 10-12 minutes, flipping halfway through, until crispy and cooked through.

  7. 7

While the chicken is cooking, prepare the wraps by laying out 4 large tortillas on a clean surface.

  8. 8

Spread 1/4 cup ranch dressing evenly over each tortilla.

  9. 9

Top each tortilla with 1 cup shredded lettuce, 1 cup halved cherry tomatoes, 1/2 cucumber sliced, and 1/4 cup shredded cheese if using.

  10. 10

Once the chicken is done, let it cool for a minute, then add the crispy chicken strips to the center of each tortilla.

  11. 11

Roll up each tortilla tightly to enclose the filling, then slice in half to serve.
