Ingredients

- (1 lb) cooked chicken breast, shredded
- (1 cup) bell peppers, diced
- (1 cup) onion, diced
- (1 cup) shredded cheese (cheddar or Mexican blend)
- (4) large flour tortillas
- (1 tablespoon) olive oil
- (1 teaspoon) garlic powder
- (1 teaspoon) cumin
- (1 teaspoon) chili powder
- (1/2 teaspoons) salt
- (1/4 teaspoons) black pepper

In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Add 1 cup of diced onion and 1 cup of diced bell peppers to the skillet. Sauté for 5-7 minutes until softened.

Stir in 1 lb of shredded cooked chicken, 1 teaspoon of garlic powder, 1 teaspoon of cumin, 1 teaspoon of chili powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook for an additional 2-3 minutes until heated through. Add 1 teaspoon garlic powder, 1 teaspoon cumin, 2/4 teaspoon salt, and 1/4 teaspoon black pepper.

Remove the skillet from heat and stir in 1 cup of shredded cheese until melted and combined.

Lay out 4 large flour tortillas on a flat surface. Divide the chicken and veggie mixture evenly among the tortillas, placing it on one half of each tortilla.

Fold each tortilla in half over the filling to create a quesadilla.

Preheat the air fryer to 375°F (190 °C) for about 5 minutes.

Spray the air fryer basket lightly with cooking spray. Place 2 quesadillas in the basket, ensuring they are not overlapping.
