- (1) head cauliflower, cut into florets
- (1/2 cups) all-purpose flour
- (1/2 cups) water
- (1 teaspoon) garlic powder
- (1 teaspoon) onion powder
- (1 teaspoon) smoked paprika
- (1/2 teaspoons) salt
- (1/2 teaspoons) black pepper
- (1/2 cups) buffalo sauce
- (8) small corn tortillas
- (1 cup) shredded lettuce
- (1/2 cups) diced tomatoes
- (1/2 cups) diced red onion
- (1/2 cups) crumbled blue cheese (optional)
- (1/4 cups) fresh cilantro, chopped

In a large bowl, mix 1/2 cup all-purpose flour, 1/2 cup water, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon smoked paprika, 1/2 teaspoon salt, and 1/2 teaspoon black pepper until smooth.

Add the cauliflower florets to the batter and toss until evenly coated.

Preheat the air fryer to 400°F (200 °C).

Place the coated cauliflower in the air fryer basket in a single layer, working in batches if necessary, and cook for 15 minutes, shaking halfway through.

After 15 minutes, pour 1/2 cup buffalo sauce over the cauliflower and toss to coat. Return the cauliflower to the air fryer and cook for an additional 5 minutes.

Warm the corn tortillas in a skillet or microwave until pliable.

Assemble the tacos by placing a portion of the buffalo cauliflower in each tortilla, then top with shredded lettuce, diced tomatoes, diced red onion, and crumbled blue cheese if using.
