- (1 tablespoon) olive oil
- (1 teaspoon) garlic powder
- (1 teaspoon) paprika
- (1/2 teaspoons) salt
- (1/4 teaspoons) black pepper
- (4) large eggs
- (1/2 cups) shredded cheddar cheese
- (2 tablespoons) chopped green onions

Peel and dice the 2 medium potatoes into small bite-sized cubes.

In a mixing bowl, toss the diced potatoes with 1 tablespoon olive oil, 1 teaspoon garlic powder, 1 teaspoon paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until evenly coated. Add 2/4 teaspoon salt.

Preheat the air fryer to 400°F (200 °C) for about 5 minutes.

Place the seasoned potato cubes in the air fryer basket in a single layer. Cook for 15 minutes, shaking the basket halfway through to ensure even cooking.

While the potatoes are cooking, crack 4 large eggs into a bowl and whisk until well combined.

After the potatoes are done, remove them from the air fryer and set aside. In the same bowl, scramble the eggs over medium heat in a non-stick skillet until just set, about 3-4 minutes.

Once the eggs are cooked, add the cooked potato bites back into the skillet and gently fold them together with the eggs.

Sprinkle 1/2 cup shredded cheddar cheese over the egg and potato mixture. Allow it to melt for about 1-2 minutes.
