- (1) bell pepper, diced
- (1) small onion, diced
- (2 tablespoons) olive oil
- (1 teaspoon) paprika
- (1 teaspoon) garlic powder
- (1/2 teaspoons) salt
- (1/4 teaspoons) black pepper
- (4) large eggs
- (2 tablespoons) fresh parsley, chopped

Preheat the air fryer to 400°F (200 °C).

In a large bowl, combine 4 medium potatoes (diced), 1 bell pepper (diced), and 1 small onion (diced). Add 2/4 teaspoon salt.

Drizzle with 2 tablespoons olive oil and sprinkle with 1 teaspoon paprika, 1 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Toss until well coated.

Transfer the potato mixture to the air fryer basket and spread it out evenly. Cook for 20 minutes, shaking the basket halfway through.

After 20 minutes, make 4 small wells in the potato mixture and crack 1 large egg into each well.

Return the basket to the air fryer and cook for an additional 8-10 minutes, or until the eggs are cooked to your liking.

Once done, remove the hash from the air fryer and sprinkle with 2 tablespoons fresh parsley (chopped) before serving.
