Air Fryer Breakfast Burritos with Eggs and Veggies

- (1/2 cups) bell pepper, diced
- (1/2 cups) onion, diced
- (1/2 cups) spinach, chopped
- (1/2 cups) shredded cheese (cheddar or your choice)
- (4) large flour tortillas
- (1/4 teaspoons) salt
- (1/4 teaspoons) black pepper
- (1/2 teaspoons) garlic powder
- (1/2 teaspoons) paprika
- Cooking spray or olive oil

In a medium bowl, whisk together 4 large eggs, 1/4 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon garlic powder, and 1/2 teaspoon paprika until well combined.

Heat a non-stick skillet over medium heat and add 1/2 cup diced onion and 1/2 cup diced bell pepper. Sauté for 3-4 minutes until softened.

Add 1/2 cup chopped spinach to the skillet and cook for an additional 1-2 minutes until wilted.

Pour the egg mixture into the skillet with the veggies. Cook, stirring gently, until the eggs are fully scrambled and cooked through, about 3-4 minutes. Remove from heat and let cool slightly.

Lay out 4 large flour tortillas on a clean surface. Evenly distribute the egg and veggie mixture among the tortillas, then sprinkle 1/2 cup shredded cheese on top of each.

Fold the sides of the tortillas over the filling, then roll them up tightly from the bottom to create burritos.

Preheat the air fryer to 350°F (175 °C). Lightly spray the burritos with cooking spray or brush with olive oil.

Place the burritos seam-side down in the air fryer basket, making sure they are not overcrowded. Cook for 10-12 minutes, flipping halfway through, until they are golden brown and crispy.
