- (4 slices) whole grain bread
- (2) ripe avocados
- (1 teaspoon) lemon juice
- (1/2 teaspoons) salt
- (1/4 teaspoons) black pepper
- (4) large eggs
- (1 tablespoon) olive oil
- (1/4 teaspoons) red pepper flakes (optional)
- Fresh cilantro for garnish (optional)

In a bowl, mash 2 ripe avocados with 1 teaspoon lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until smooth. Set aside.

Brush 4 slices of whole grain bread with 1 tablespoon olive oil on both sides.

Place the bread slices in the air fryer basket in a single layer and cook for 5-6 minutes until golden and crispy. Remove and set aside. Add 2/4 teaspoon salt and 1/4 teaspoon red pepper flakes (optional).

While the bread is toasting, bring a pot of water to a gentle simmer and add a splash of vinegar (optional).

Crack 4 large eggs into small bowls. Create a gentle whirlpool in the simmering water and carefully slide each egg into the water.

Poach the eggs for about 3-4 minutes until the whites are set but the yolks remain runny. Remove with a slotted spoon and drain on paper towels.
